I’m trying to give up coffee. Decaf coffee. It sounds easy since it’s clearly not the caffeine I’m hooked on. I’ve come to realize it’s the routine of stopping and buying the coffee I’m addicted to. Driving by the Dunkin’ Donuts in the morning pains me for some reason. Why am I trying to give it up? I never feel good after I drink it. I’m super sensitive to even the small amount of caffeine in decaf and yet I can’t stop buying it every morning.

During this difficult transitional time for myself, smoothies are slowly becoming my morning drink. They are a quick and easy way to have a healthy breakfast.  I have been trying to make them before work or if I am running late (which is often)  I make them at night. Big helpful smoothie tip right here: wash your smoothie glass immediately when done or at least soak it. I cry a little when I see my husband’s smoothie glass from the night before sitting in our living room. Very glad he’s having a good serving of fruits – very sad about a glass caked with fruit starch I have to scrub.

Smoothies are fun to make because there are endless combinations. Want one for breakfast? Throw some fruit and yogurt together.  Dessert smoothie? Add a bit of chocolate, peanut butter or ice cream. (Or all.)

Right now I’m hooked on mangoes. I’m also a little obsessed with fresh mint. It just smells so good!

For this smoothie, I usually use fresh mangoes and frozen pineapple chunks. Using frozen pineapple is a lot easier than cutting up a fresh one and it makes the smoothie frozen. If you use all fresh fruit, the texture will be a lot thinner and creamier.  If you want extra frozen use frozen fruit all around.

Enjoy this on a hot summer day (if we ever have another one). Add a garnish of a mango or pineapple slice. I’m not saying some rum wouldn’t be a nice addition either.

If you want this to be a frozen smoothie and are using fresh fruit, add a handful of ice.

Serves: 2 large cups (makes about 20 oz. total)
Ingredients
  • 2 cups mango (fresh or frozen)
  • ¾ cup pineapple (fresh or frozen)
  • 1 cup of coconut milk
  • ½ cup orange juice
  • 6 fresh mint leaves
Instructions
  1. Add all ingredients to blender. Blend well.
  2. Garnish with a pineapple or mango slice or fresh mint.
