Just sitting here drinking my pear smoothie and mourning the loss of fall. Since when did the Christmas season begin on November 1? I saw three Christmas commercials the last half hour and my hometown  has lights and wreaths hung in the town center. 

Is everyone skipping right over Thanksgiving, the biggest food holiday of the year?  It’s very confusing to my holiday spirit when I see both Christmas lights and Halloween decorations. I don’t know which seasonal mental state to be in.   pearpineappletop

I think some people woke up the morning after Halloween and immediately burned all their pumpkins and had poinsettias and Christmas lights just waiting behind their front doors.  

Before you feel compelled to switch over to egg nog lattes every morning give this pear pineapple smoothie a try.

Pears are a wonderful fall fruit and there are so many different types each with their own flavor profile. Here is a helpful visual guide to pears from Epicurious. For this recipe I used Bartlett pears because they are extremely juicy but you can use any type.  The pear goes beautifully alongside the pineapple and the hint of coconut gives it a little something extra.

I love making smoothies because they make me feel efficient. I can make them quickly and get a whole bunch of nutritious food all at once with minimal cleanup. And a smoothie is very portable so you can leisurely carry it around with you throughout your morning.

Start by peeling the pears and then cut off all the flesh leaving the core behind. Add to the blender with the pineapple.  I use frozen pineapple chunks because let’s be honest, cutting up a pineapple is no joke and it’s not fun. Then add yogurt and a tiny bit of water.  Lastly, add some shredded coconut. Enjoy and cheers to fall!

Ingredients
  1. 1 large pear
  2. 1/4 cup frozen or fresh pineapple pieces
  3. 1 tablespoon of shredded coconut
  4. 1/2 cup plain yogurt (Greek or regular)
  5. 1/4 cup water
Instructions
  1. Peel the pear and cut the flesh away from the core. Add to blender.
  2. Add rest of ingredients and blend.
